These days, Jessica Simpson has been looking fantastic. She’s lost most all of her pregnancy weight and seems to be back to her normal bubbly self, at least in front of the cameras. So how did she do it? Well, TMZ got their hands on a copy of Jessica Simpson’s complete diet plan and it looks like the blonde has been eating lots of egg white omelets and whipped chick peas since this summer. The star’s post-pregnancy weight-loss quest kicked off with a 15-day smoothie diet in July and then followed a strict Weight Watchers regimen.
Here’s an example of one day of eating for the star and husband-to-be Eric Johnson (who apparently was on the diet too, perhaps for moral support):
Breakfast: Quinoa apple breakfast cereal
Lunch: Jessica: Seared shrimp with corn tomato salad; organic greens and lite dressing. Eric: Soba noodles in an Asian broth with veggies
Snack: Sliced apples and cheese
Dinner: Jessica: Sesame seared tuna with roasted potatoes and a seasonal side dish. Eric: vegetarian entrée.
Dessert: Grilled peaches
Not too shabby, eh? Well, perhaps if you have a personal chef to whip up said meal plan…
