There’s nothing better than a delicious meal, except for when the delicious meal is healthy as well! We turned to Jessica’s chef, Gabby Dalkin of WhatsGabyCooking.com for one of Jessica‘s favorite meals: Thai-Style Peanut Chicken Lettuce Wraps! Gabby said, ” Lettuce wraps are one of my favorite things to make! They are light but packed full of flavor. You could jazz them up even more by using grilled beef instead of the chicken, or make them that much lighter and vegetarian by subbing in chopped tomatoes and cucumber instead of the protein. Whatever way you decide, I can promise you that you’ll love them!”
4 skinless, boneless chicken breasts- poached, cooled and chopped
1/3 cup of roasted unsalted peanuts
1 clove of garlic
1 teaspoon of lime zest
1 tablespoon of lime juice
1/3 cup of fresh cilantro leaves
1 tablespoon if grapeseed oil
1 teaspoon of grated fresh ginger
1/2 teaspoon of red pepper flakes
1 teaspoon of sesame oil
1 teaspoon of fish sauce
20 pieces of butter lettuce (or another flexible lettuce for wrapping)
1 cup of peanut dipping sauce (can be found at most grocery stores)
In a medium-large bowl, add the cooked, cooled and chopped chicken breasts.
In a large food processor, combine the peanuts, garlic, lime zest, lime juice, cilantro, grapeseed oil, ginger, red pepper flakes, sesame oil and fish sauce. Pulse for 20-30 seconds until everything is incorporated. Add the mixture to the chopped chicken breasts. Stir to combine and adjust seasoning if needed.
Transfer the chicken mixture to a large serving bowl.
Place the peanut dipping sauce in a medium sized bowl.
Be sure to wash and separatee the lettuce leave and arrange them on a platter.
Spoon about 1/3 cup of the mixture onto a piece of lettuce and drizzle with the peanut sauce. Enjoy!
