There’s nothing better than a delicious meal, except for when the delicious meal is healthy as well! We turned to Jessica’s chef, Gabby Dalkin of for one of Jessica‘s favorite meals: Thai-Style Peanut Chicken Lettuce Wraps! Gabby said, ” Lettuce wraps are one of my favorite things to make! They are light but packed full of flavor. You could jazz them up even more by using grilled beef instead of the chicken, or make them that much lighter and vegetarian by subbing in chopped tomatoes and cucumber instead of the protein. Whatever way you decide, I can promise you that you’ll love them!”

4 skinless, boneless chicken breasts- poached, cooled and chopped
1/3 cup of roasted unsalted peanuts
1 clove of garlic
1 teaspoon of lime zest
1 tablespoon of lime juice

1 teaspoon of grated fresh ginger
